For the hedge maze, you want big boosts, but not actual stat increases. My strategy: Get to level twelve, then bring along your toughest attack familiar. Also, get mysticality and moxie increasers (i.e. certain dungeons of doom potions, goofballs, lihc eye pies, etc.)
Keep at it until you can rotate the hedge maze puzzles toward the key, then adventure, then rotate them toward the tower, then adventure. -You have now beaten the hedge maze section- This has been a public "The NS sucks" service announcement.

For the Sorceress, I often use a Mosquito (as large as I can get it) and an Acid-Squirting Flower. As I play Hardcore mostly and don't have Armourcraftiness yet, I use Star Garb and a couple of other items as decided by class, and use auto-hit skills (face poke, all the Sauceror and Pastamancer attack spells, Eye of the Stoat Thrust-Smacks etc.) and use a LOT of pixel potions to keep me going. As she sometimes stops you using stuff, try to use it well before you'd be beaten if it didn't get used, or you'll probably have it stolen and get beaten up.
That's all I can think of for now...

I always prefer using the NPZR for the NS. Its combined healing/attacking/delevelling attacks are well worth it, and you get free toast, too! And always the Furry Suit. I'm never caught without it.
If you've got Double-Fisted, definitely get something like a stainless steel shillelagh, as the bonuses to damage are really important.

My favorite familair to use is a Misshapen Animal Skeleton, because of its awesome damage (21+20). Always have the furry suit, beacuse I have double handed skull smashing I use a batblade beacause of major melee damage and lots of damaging accessories, (Acid-squirting flowers are NOT suggested for seel clubbers as you can do much more damage with melee increasers).

I personally use a Cocoabo if that's the best you can get, otherwise a teddy bear or NPZR.

The easiest way to beat the Sorceress' Tower: Keep combat items, go to the level you reached, see if you can defeat that enemy, if not run away and get the item you need.
Also: Why does the chaos butterfly defeat the Tyrannosauras Tex? Also: Use the Dungeons of Doom wand to zap a white picket fence instead of just trying to recieve a barbed-wire fence through adventuring if you must take on the cow. Trust me.

I ascended as a Seal Clubber once. I used double-fisted skull smashing and wielded an antique spear. Good times, goooooood... this afternoon.
